How to Make Hot Koshari Sauce

If you're a fan of spicy food and love the flavors of Egyptian cuisine, then you're in for a treat with this recipe for hot koshari sauce. Koshari is a traditional Egyptian dish consisting of a tasty combination of rice, lentils, pasta, and topped with a flavorful tomato sauce. Adding some heat to the sauce takes this dish to a whole new level. Here's a step-by-step guide on how to make hot koshari sauce:

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes (adjust for desired spiciness)
  • 2 cups canned crushed tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in a saucepan over medium heat. Add the chopped onion and sauté until translucent and lightly golden, about 5 minutes.

  2. Add the minced garlic to the saucepan and sauté for an additional minute until fragrant.

  3. Sprinkle in the ground cumin, ground coriander, paprika, and crushed red pepper flakes. Stir well to combine the spices with the onions and garlic, allowing them to bloom and release their flavors.

  4. Pour in the crushed tomatoes, tomato paste, and water. Stir everything together until well combined. Add salt and pepper to taste.

  5. Bring the sauce to a simmer, then reduce the heat to low. Cover the saucepan and let the sauce cook for about 20 minutes, allowing the flavors to meld together.

  6. After 20 minutes, remove the lid and give the sauce a taste. Adjust the seasonings if needed, adding more red pepper flakes for extra heat.

  7. If you prefer a smoother sauce, you can use an immersion blender or regular blender to blend the sauce until smooth. Be cautious when blending hot liquids and ensure the sauce has cooled down a bit before blending.

  8. Once blended, return the sauce to the saucepan and keep warm until ready to serve. The sauce should have a rich, slightly spicy flavor that complements the other ingredients in koshari.
